🍋 Lemon Garlic Chicken Stir-Fry

This dish is quick, bright and so easy to pull together with items you likely already have on hand. Serves 3-4.

Ingredients:

  • 1lb Frozen chicken breast strips or tenders (thawed slightly if needed)

  • Olive oil

  • 2 cloves garlic, minced

  • 1/2 lemon (zest + juice)

  • 2 cup frozen mixed vegetables (or whatever you have!)

  • Soy/tamari sauce or coconut aminos to taste

  • Optional: chili flakes, fresh herbs like cilantro

  • Optional: rice or ramen noodles cooked according to package instructions.

Instructions:

  1. Heat a skillet over medium-high heat with a splash of olive oil.

  2. Add frozen chicken (if not fully thawed, cover for 1–2 minutes to speed it up).

  3. Toss in garlic, lemon zest, and a pinch of chili flakes. Sauté until chicken is browned and cooked through (about 5–6 min).

  4. Add frozen veggies, splash of soy sauce, and lemon juice. Stir-fry another 3–4 minutes until everything’s hot and coated.

  5. Serve as-is or over rice, ramen noodles, or even toast if you're in full survival mode.
