🍋 Lemon Garlic Chicken Stir-Fry
This dish is quick, bright and so easy to pull together with items you likely already have on hand. Serves 3-4.
Ingredients:
1lb Frozen chicken breast strips or tenders (thawed slightly if needed)
Olive oil
2 cloves garlic, minced
1/2 lemon (zest + juice)
2 cup frozen mixed vegetables (or whatever you have!)
Soy/tamari sauce or coconut aminos to taste
Optional: chili flakes, fresh herbs like cilantro
Optional: rice or ramen noodles cooked according to package instructions.
Instructions:
Heat a skillet over medium-high heat with a splash of olive oil.
Add frozen chicken (if not fully thawed, cover for 1–2 minutes to speed it up).
Toss in garlic, lemon zest, and a pinch of chili flakes. Sauté until chicken is browned and cooked through (about 5–6 min).
Add frozen veggies, splash of soy sauce, and lemon juice. Stir-fry another 3–4 minutes until everything’s hot and coated.
Serve as-is or over rice, ramen noodles, or even toast if you're in full survival mode.
