Garlic Cilantro Coleslaw
This is the best coleslaw-even coleslaw haters like this slaw. It’s great on street tacos, on it’s own, or as the base for a salad- just add a grilled protein like rockfish, chicken, or shrimp! Makes 6 servings
Ingredients:
1 14oz. bag of tri color coleslaw
1/2 cup fresh chopped cilantro (a big handful)
½ cup plain greek yogurt or reduce to 1/3 mayo for DF
1/2 tablespoon olive oil or avocado oil
1 tablespoon lime juice
1 teaspoon sugar (or sub coconut sugar)
1 clove garlic finely grated
1 small to medium jalapeno (do not seed if you want it spicy)*
1/4 teaspoon salt, plus more to taste
Freshly ground black pepper
Optional: 1-2 teaspoons water, to thin sauce if necessary
Directions:
Add all ingredients in a large bowl and toss to combine.
