🥙Buffalo Chicken Salad
This buffalo chicken salad is packed with flavor, great for meal prep and super easy to make! Serve it for lunch with crackers, in a lettuce wrap, over a mixed greens or as a sandwich. Makes 4 servings
Ingredients:
2 cups shredded chicken (I poach mine in the instant pot on high pressure for 10 min or you could grab a rotisserie chicken.)
¼ cup buffalo sauce (I like Nobel Made Medium Buffalo Sauce)
¼ cup red onion, diced (soak in a little water then drain to take away some of the bite)
2 stalks celery, diced
2 tbs full fat greek yogurt or plain DF yogurt
2 tbs avocado oil mayo
Salt and pepper, to taste
Green onions, for garnish, optional
Directions:
Combine all ingredients in a large bowl and toss to combine. Enjoy right away or chill before serving.
